Chef Yoshihiro Murata of Kikunoi restaurant and Aya Kakisawa of patisserie Potager discuss regional ingredients of Japanese cuisine.

In 2013, "Japanese cuisine" was added to the UNESCO's Intangible Cultural Heritage list in recognition of Japan's diverse food culture. This comes from Japan's rich natural environment and regional characteristics, and has brought Japanese cuisine into the international spotlight, attracting considerable interest. Some of the key ingredients that have supported this culture are "traditional vegetables" that have been handed down from generation to generation in each region. The Ministry of Agriculture, Forestry and Fisheries is holding this event to provide those in attendance an opportunity to taste the highly distinctive traditional vegetables that come from Japan's regions together with dishes made with them, and to foster appreciation of those vegetables.

During the presentation, participants will be served a boxed meal (bento) and sweets prepared with traditional vegetables by Mr. Yoshihiro Murata from the Kikunoi restaurant in Kyoto, and Ms. Aya Kakisawa of patisserie Potager, a shop specializing in vegetable-based sweets. We hope to see you there.

「和食」と「伝統野菜」を語る夕べ

わが国の豊かな自然と郷土性が育んだ多様な食文化が認められ、2013年に「和食」がユネスコ無形文化遺産に登録されました。その影響もあり、現在、和食は国際的にもその価値が見直され、高い関心が寄せられています。そんな和食文化を支えてきた食材のひとつが、日本各地で古くから受け継がれてきた「伝統野菜」です。農林水産省(Ministry of Agriculture, Forestry and Fisheries)は、地域に根ざした個性豊かな伝統野菜を「和食」と共に味わっていただきながら、その魅力に触れていただくためのレセプションを開催いたします。

当日は伝統野菜に縁のある方々のスピーチを交えながら、京料理の名店「菊乃井」の村田吉弘氏と、野菜スイーツの専門店として有名な「パティスリー ポタジエ」の柿沢安耶氏による、伝統野菜を使った御弁当とスイーツをご用意して皆様のご参加をお待ちしております。
