The legendary Tsukiji fish market is gone. The new Toyosu fish market is born. After years of controversy and delay, the market that symbolises Japan's culinary culture is up and running at its new site across Tokyo Bay.

Many questions remain. Is the new site safe from soil contamination? Is it efficient, economic and well-designed? Will customers and tourists come to the new, less convenient location in Toyosu? What is the long-term future of the market in an era of declining population and fish consumption? Will the Tsukiji mystique live on?

To answer these questions, we are fortunate to be joined by Hiroyasu Ito, chairman of the Toyosu Market Association and head of the wholesaler Chuo Gyorui (also known as Marunaka)
